Ingredients
2 tbs coconut-avocado oil or lard(Order Here)
2 tbs cassava flour (you can use arrowroot or tapioca) (Order Here)
salt
oil for pan prying the tots
Directions
Now in a small dish place 2 tbs of coconut-avocado oil or lard. Now put in the 2 tbs of cassava flour. mix well with a whisk or fork. This will act as your binder and help solidify the tots.
Now add the mixture to the shredded sweet potatoes and fully incorporate. Now you will begin forming up your tots. Take a bout 1 tbs of tots mixture in your hand. Work it a little like a hamburger patty. Form it into a tot and set it on a clean plate. (You can always just form it into little discs and so you only have to fry two sides, rather than a four sided tot.) Do this with the rest of the tots mixture.
Now heat up a pan with some oil for pan frying. You want to have the base of the pan full of warm oil. You want your heat high enough to sizzle when you place a tot in but low enough so your pan is not smoking. On my large burner this is below med. Adjust your temp as needed. After each tot is golden brown on all sides, move it over to a cooling rack.
