I make this at least once a week and I usually make a large batch of it so that we can enjoy it for multiple mornings. We enjoy it in the mornings with some sliced avocado, bacon or sausage and fruit. When you can not have eggs you need to be a little more creative in the mornings. For some reason I really struggled with what to make for breakfast when I began eating AIP. I also use lots of different veggies, not only the ones listed here. I usually always add fresh spinach though because it has a great flavor and I am always looking for ways to get more dark leafy greens in our diet. Sometimes I may use zucchini, carrots, celery, sweet potatoes or even squash.
Ingredients
2 parsnips peeled and chopped
1 large onion
10 mushrooms sliced
3 green onions
2 cups fresh spinach
A drizzle of avocado or coconut oil for pan frying

Directions
Heat your pan over med/high heat. Add chopped onion to drizzle of oil. Add chopped parsnips. With high heat, fry them for about 2-3 min to start to soften and crisp up the outside. Add mushrooms and 2 chopped green onions. Sauté until mushrooms have softened. Leave your heat up high because you want everything to brown and crisp. Now add the fresh spinach, cook just until it starts to wilt down. Turn your heat off and salt and pepper (if you have reintroduced pepper to your diet) to taste. Enjoy!
