Did you know you can substitute red potatoes for radishes? This was something I learned when my husband and I were doing Atkins, many moons ago. Trying hard to keep our carbs low at that time, potatoes were something we avoided. I was thinking about this the other day and realized I have not made them in some time.
No, they do not taste just like potatoes, no they don't have a perfect potato texture, but they are sure good. When you pan fry or oven roast radishes they lose that bite. The flavor becomes very mild. Much the same as grilled onions don't taste like fresh onions.
If you can not have potatoes I think this is a fabulous alternative. This is a great side dish and we just love it. The next day I have to say the radishes are very soft. Just to keep in mind, in my opinion its better fresh. Although that sure did not stop us from throwing it back into a pan and adding diced sausage to it for breakfast this morning.

I purchased 4 bushels of radishes. This is how many I had after cleaning, removing them from the greens, and trimming off the top and bottom.
Ingredients
4 bushels of radishes
1 large onion
6 slices of high quality thick cut bacon
2 tsp italian seasoning
a drizzle of avocado or coconut oil for pan frying
salt and pepper to taste (if you have reintroduced)

Directions
Remove all radishes from the greens. Rinse and trim off the bottoms. Chop into quarters. Heat some coconut or avocado oil in a pan on med/high. Add the radishes, salt and pepper (if you have reintroduced) , italian seasoning and pan fry (just like you would potatoes) until the edges are golden brown and centers are soft. Now empty radishes onto a plate. Chop your bacon and onion into 1/4 inch pieces. Add them to the skillet and cook on med/high until crisp and golden brown. Now add back in your radishes and cook together for a few min. And now plate them up and sprinkle with fresh green onion. Serve and Enjoy!
