My youngest daughter loves onion rings. Anytime we go out to eat she is looking to see if onion rings are a side option. So I sit with her eating my salad with bun less burger and I am not jealous. I am happy to be able to find options I can eat and feel good. That however doesn't mean I don't enjoy them! I do like them.
So if I want some I know I can make my own! I usually end up eating a few of these before they are even cool enough to eat. They do not last in my house!

Ingredients
2 large white onions
1 cup cassava flour (Order Here)
1/2 cup arrowroot flour (Order Here)
1/2 tsp salt
1/2 tsp onion powder
1/2 tsp garlic powder
1 gluten free beer (you could use a can of seltzer/sparkling water)
Then use 1/2 cup cassava flour in a separate bowl.
You will also need coconut or avocado oil for frying

Directions
Peel and slice your onions into rings. Mix your cassava flour, arrowroot flour, salt, onion powder and garlic powder in a bowl, then add your gluten free beer and mix throughly.
Dip each piece of onion in the batter. And then dredge through the cassava flour. (this is an important step, it really solidified the batter. None of the batter came off during frying!) Then place directly into hot coconut oil. Fry until golden brown on each side. Move to a cooling rack and salt immediately.
