I have been wanting a good pie crust recipe as soon as I began AIP. Well I have found it! It is flaky and perfect! I see some chicken pot pies in my future! I would take these mini pumpkin pies to any party and not tell anyone they are AIP compliant. I honestly do not think anyone would know the difference! You could top them with coconut whipped cream but I just thought the frosting was a nice way to mix things up.
Ingredients
Pie Crust:
1 cup cassava flour (Order Here)
1/2 cup cold lard
4 tbs ice water
1 tbs honey
1/4 tsp salt

Frosting:
1/2 cup coconut/palm shortening (Order Here)
1/4 cup honey
1 cup cassava flour (Order Here)
1/2 cup cold lard

Directions
Pie Crust: Pre heat oven to 450 degrees. Place flour and lard in food processor and pulse until small crumbs form. Add water and honey until ball forms. Separate your dough into 24 small balls. Flatten each ball and press into your mini muffin pan. You can just do a large pumpkin pie as well. You don't have to do mini pies here. However if you are having a dinner party with bite sized treats, they are perfect!
Place into the oven for 12 min. Remove and set aside to cool. Prepare pumpkin pie filling according to directions in recipe: http://www.feedingyourselfwell.com/recipes/aip-pumpkin-custard
To prepare the frosting simply combine the shortening and honey and whip with your hand mixer. Use immediately or place in refrigerator until you need to use it.
Once the filling is finished ladle it into the cups and place in the refrigerator to cool. Once they are cool and the filling is set up, frost and enjoy!
