Sometimes you just want something sweet, creamy and cold. Now one thing I really love about this ice cream is how easy it is. I have an ice cream machine and every once in a blue moon I pull it out, freeze the bowl, prepare the ingredients, cool them and get it set up to make some ice cream. Now on those occasions I do have fun making some very tasty ice-cream but most times I don't want to go through the work to make it. This is such a quick and easy recipe that I many times will just short cut to this recipe and enjoy it in just a few min rather than an hour or more. You don't have to use the honey in the recipe but I really feel that it adds a depth of flavor and sweetness that the blueberries lack on their own.
Ingredients
2 cups frozen blueberries
1 1/12 cold full fat coconut milk
1/8 cup honey
1 1/12 cold full fat coconut milk
1/8 cup honey
Directions
Throw all the ingredients into the blender and blend until smooth, place in the freezer if you wish or eat immediately.
