I struggled a bit at first when I started AIP wondering what kinds of appetizers I could make for guests or bring to a dinner party if requested to do so. I wanted to have something pretty and flavorful, but healthy and whole. This certainly fit all my criteria.
Ingredients
2 cucumbers (I used arminian)
2 tuna steaks marinaded, seared and sliced (recipe here)
olive tapenade (recipe here)
Italian Parsley for garish

Directions
Slice your cucumber about 1/4 inch thick, discard the ends of the cucumber. Prepare tuna steaks according to this recipe (here). Prepare olive tapenade according to this recipe (here). Assemble and top with single sprig of italian parsley. You can also sprinkle drops of balsamic vinegar across the tops if you wish. Serve and Enjoy!
