Who doesn't love a warm hand pie! My mom used to made them and I still remember watching them bake and drooling! These are just fun and you can fill them with any fruit! I thought the figs and apple sounded like a nice combo but be creative and choose what you like!
Ingredients
Pie Crust:
1 cup cassava flour (Order Here)
1/2 cup cold lard
4 tbs ice water
1 tbs honey
1/4 tsp salt
Filling:
1 apple cored & sliced thin
2 tsp cinnamon
2 tbs honey
2 tbs coconut oil
1/2 tbs water
organic sugar free fig jam
1 cup cassava flour (Order Here)

Filling:
1 apple cored & sliced thin
2 tsp cinnamon
2 tbs honey
2 tbs coconut oil
1/2 tbs water
organic sugar free fig jam
Directions
Pie Crust: Pre heat oven to 400 degrees. Place flour, salt and lard in food processor and pulse until small crumbs form. Or in a bowl combine with a pastry cutter. Add water and honey until ball forms. Separate your dough into 8 identical balls.
Now for your filling: Take your apple slices and warm a pan with 1 tbs coconut oil up in it. Add your apples. Pan fry until slightly soft, now add 1 tbs honey and 1 tsp cinnamon. Pan fry a min or so longer. now remove from what and set apples aside.
Cover your cutting board with plastic wrap and and place 1 dough ball on it. Flatten out the dough ball with the flat of your hand, doing your best to form a circle. On one side spread out some fig jam leaving the edge clean to seal. Add a few small slices of apple over the jam. Now slide your hand under the plastic wrap and use it to help you fold over your hand pie and seal the clean side over the apples and fig jam. Seal down the edge and tuck in the apples. Now pull back the plastic wrap and trim the edge of your hand pie to be nice and round, seal the edge of your hand pie with a fork. Score the top of your pie with a knife. Now on a cookie sheet place a piece of parchment paper. Turn the hand pie over in your hand off the plastic wrap and into your hand. Now go place it on the parchment.
Do this 8 times to get all your hand pies made. Now in a small bowl mix 1 tbs honey, 1 tbs coconut oil, 1 tsp cinnamon and 1/2 tbs water. Now with a basting brush, cover all your hand pies with this mixture.
Now place in the oven for 20 minutes. Remove and allow to cool. Serve plain or with some coconut ice cream and enjoy!
